b12 Energy Mac and "Cheese"

 

Ingredients:
1 8oz pkg. Brown Rice Pasta (lundberg is my favorite for the extra fiber)

2-1/2 cups plain almond milk or non-dairy milk of choice

2-1/2 tbsp coconut flour

4 tbsp nutritional yeast flakes

1-1/2 tsp tamari

1/2 tbsp garlic powder

2 tbsp non-hydrogenated vegan butter (earth balance)

1 tsp dry mustard

Instructions:

Whisk together milk, flour, yeast, tamari, garlic powder, mustard and butter in saucepan. Bring to boil then lower heat and simmer 5 minutes. Meanwhile, cook pasta according to package directions. Drain, and toss with cheese sauce.

*Optional- Pour Mac and cheese into a 9x9 pan. Sprinkle gluten-free bread crumbs on top to coat. Place in oven under broiler for 3-4 minutes or until crisp
