Sneak peek for upcoming healthy cooking classes...

I love getting in the kitchen and teaching people how to make simple healthy food.  What I hear most from people when trying to stay healthy is the struggle to know what to make. So I'm excited to share two upcoming healthy cooking classes I will be teaching at Whole Foods Bowery this spring. Stay tuned to their calender of events for registration.


Friday March 12, 2010 Gluten Free Baking For Beginners:

Gluten free baking can be overwhelming for a newbie, not knowing what flours to buy and use. Learn the basics about various alternative flours, why they are beneficial for the body and how to use them in your baking. In this class, gain a better understanding of how to make healthy gluten free goods using whole grain flours, natural sweeteners, and other high quality ingredients. In this hands on class we will be making vegan banana bread, vegan thumbprint cookies, berry crumble and brownies all free of dairy, gluten and refined sugars.

What Are Those Chia Seeds Anyway?



All of our gluten free mixes use chia seed superfood to increase the nutritional profile.  So what are they anyway?

Cha Cha Cha Chia...yes they are related to that novelty chia pet that was so popular in the 80's. Chia seeds however date back much further then that. The seeds were a staple of the Mayan and Aztec diet. It was believed that the Aztec warriors survived days with just a few teaspoons of chia in their diet.  Chia seeds are one of the most powerful superfoods providing excellent source of fiber, antioxidants, vitamins and minerals.  Plus they are loaded with omega 3's,  containing eight times more than salmon, gram for gram.

When added to water and allowed to sit for 30 minutes, chia forms a gel that can be the base of a drink or pudding. Research suggests that this gel like consistency also occurs in the stomach, slowing down how fast our bodies convert carbohydrate calories into simple sugars. In addition, because of this, chia offers the ability to aid in fueling endurance, perfect for a pre-workout food. I like to add chia to smoothies, oatmeal and ofcourse my baked goods.  How about you?

when in doubt, source it out.

This morning I was cleaning up files on my computer and stumbled upon the original packaging for purely elizabeth gluten free muffin mix.  Now when I say original, I mean, the labels that I created before asking for help.  You see, I'm the type of person that enjoys doing everything, well most everything. Especially anything creative (I actually had a stint at FIT in accessories design). I like to try and figure out many things on my own, which is why it is sometimes hard to ask for help. My graphic designer Jen, got wind of what I was doing and immediately offered to "clean things up a bit". Here's version I from me:

Lesson learned...There is a reason people specialize in certain areas and are experts.  When in doubt, source it out.  Even if it costs extra money and time, it is most often worth the expert advice in the long run.  Thank you to my graphic designer Jen at 4:52 design, for her incredible work and never-ending help and to Miha, my amazing food photographer who helped to make the muffins so visually delicious.
