These little hemp seeds pack a powerful punch, which is why some consider them a perfect food. Hemp seeds were first used in China over 6000 years ago as a staple food. Infact, hemp production is one of the oldest industries on the planet. Not only can we eat this incredible plant but we can also use it to make paper, clothing and fabrics, body care, plastic, building material and fuel. Wow! So what makes this seed so special?

Benefits to hemp seeds:
1. Rich in omega-3 fatty acids. Hemp seeds contain all the essential fatty acids necessary for humans. Hemp seeds provide a perfect ratio of omega 3 fatty acids to omega 6 fatty acids.
2. High in protein, containing one of the highest amounts of plant protein next to algae. This protein is very easy to digest and use as energy.

3. This superfood is rich in sulfur, known as the beauty and longevity mineral.

4. Contains high levels of minerals, including iron.

5. Hempseeds contain GLA (gamma linolenic acid), a super anti-inflammatory essential fatty acid that is also known to balance hormones.

6. Unlike animal protein, hemp seeds are an alkaline protein, helping to balance the pH of your body for optimum performance.

I love sprinkling these little gems on salads, soups, oatmeal, and just about any food that needs some added nutrition. What's your favorite way to use hemp seeds??

Hemp Seed Pesto Recipe
vegan

Ingredients:
2 cups of fresh basil
1/2 cup walnuts
1/4 cup nutritional yeast
1 clove garlic
1/2 lemon juice
*1/2 cup Vega Antioxidant EFA Oil Blend
1/2 cup hulled hemp seeds
1/2 tsp sea salt

Directions:
place all ingredients in a food processor or high speed blender and combine until smooth. Add more oil if you like a thinner consistency.

*You can also use olive oil. This Vega antioxidant oil combines green tea oil, pomegranate oil, hemp seed oil, coconut oil, blueberry oil, black raspberry oil, black cumin seed oil, cranberry seed oil, flax seed oil, pumpkin seed oil.

Food Revolution: Quick Lunch Ideas

Did you catch Jamie Oliver's Food Revolution preview last night? What did you think? Where you moved to upgrade your own daily lunch or that of your kids? How can your food choices be healthier? Where can you add in more nutrition so that you have more energy during the day, stay focused and maybe even lose a few pounds?!

Here are 7 easy lunch ideas:

1.The classic peanut butter and jelly sandwich gets a much needed upgrade. Try almond butter and berries on millet bread. Make your own spread by combining blueberries, ground flaxseed, lemon and agave nectar.

2.Make a big mixed greens salad, loaded with a rainbow of vegetables and some protein (beans, legumes, organic chicken, etc) that you can serve for several days.

3.Use leftover veggie stir-fry from dinner and put it in a sprouted grain or brown rice wrap to make your own rendition of a burrito.

4.Stock your freezer with go-to options, like Amy's Bistro Veggie Burger. It is both gluten free and vegan. Serve in a wrap with lettuce, tomato, avocado and organic ketchup.

5.Make a veggie sandwich on sprouted grain or millet bread with leftover salad ingredients such as arugula, tomato, red pepper and Bobbi's black bean hummus (by far the best hummus brand ever!).

6.Give the standard turkey sandwich a twist, by adding sliced avocado and cranberry chutney. Be sure to purchase organic turkey, free of nitrates (which are thought to be cancer causing), like Applegate Farms.

7.Instead of a mayonnaise based chicken salad, try this gluten-free vegetarian option: Chickpea Salad with Celery, Walnut, Vegenaise and Cranberries on Millet Bread.

Gluten Free Vegan Vegetable Lasagna

Here's a look at one of the many delicious recipes in our upcoming earthday e-cookbook- all vegan, all gluten-free.

[Gluten Free Vegan Vegetable Lasagna]

Ingredients:
1 1/2 tbsp olive oil
2 cloves garlic, minced
2 bunches kale, large stems removed and leaves chopped
¼ cup vegetable stock (optional)
2 cup diced mushrooms
1 zucchini, sliced
1 cup cashews
½ cup nutritional yeast
1 24oz jar tomato sauce (here I use Rao’s Arrabbiata Sauce- the best sauce in the world, plus no added sugar)
Brown rice lasagna noodles (pre-cooked, such as tinkyada)
1 cup vegan cheese for topping (daiya is one of my favorites)

Directions:
1. Set the oven to 350 degrees. Have on hand a 8-by-8-inch baking dish.
2. In a small sauté pan, heat 1 tbsp olive oil over medium heat. Add garlic and sauté until fragrant. Add kale and optional 1/4 cup vegetable stock. Continue to sauté until slightly wilted. Set aside kale mixture in a bowl.
3. In the same sauté pan, add ½ tbsp oil, chopped mushrooms and zucchini. Sauté 3-5 minutes until fragrant. Set aside.
4. In a high speed processor (vita-mix would be ideal) combine cashews, nutritional yeast and water (just enough to cover the cashews. Blend on high until you get a creamy consistency. Add salt to taste.
5. In the baking dish, spread about 1 cup of tomato sauce to cover the bottom. Add a layer of noodles, overlapping them slightly to make a solid single layer. Spread cashew cheese evenly over noodles. Layer mushroom/zucchini mixture on top of cheese. Add another layer of noodles, followed by sauce and kale mixture.
6. Repeat with one more layer of noodles, sauce, and then sprinkle generously with vegan cheese.
7. Bake the lasagna for 35-40 minutes or until bubbly. Let it sit for 5 minutes or so to firm up before slicing.

Our Gluten Free Muffins Have Gone Vegan...

You asked, we listened. In an effort to create the best tasting gluten free goodies, we have gone Vegan! While some argue that vegan goodies could never taste as good as their non-vegan counterpart, we are confident they are even better...not to mention healthier too(although the choice is always yours with our mixes)! Instead of adding in eggs, we suggest replacing with the following:

Gluten Free Blueberry Maple Muffin Mix: replace eggs with 1/2 cup unsweetened applesauce + 1/4 cup h2o

Gluten Free Apple Spice Muffin Mix: replace eggs with 1/2 cup unsweetened applesauce + 1/4 cup h2o

Gluten Free Ultimate Cacao Muffin Mix: replace eggs with 1/2 cup unsweetened applesauce

The result... not only are they vegan but they are also EXTRA, EXTRA moist!

Peanut Butter Cacao Brownie - Vegan, Gluten Free, Refined Sugar Free!

Peanut Butter Cacao Brownie Recipe
gluten-free, dairy-free, vegan, refined sugar free

[Ingredients]
1 bag purely elizabeth Ultimate Cacao Muffin Mix
1/2 cup unsweetened applesauce
1/2 cup earth balance vegan butter, melted (or other butter alternative)
1/4 cup almond milk
1/2 cup agave nectar
1/2 cup of palm sugar (or agave nectar)

peanut butter batter:
1/2 cup natural peanut butter
1/4 cup almond milk

[Directions]
Preheat oven to 350. In a medium bowl, combine wet ingredients, stirring until evening smooth. Add in muffin mix and stir to combine, set aside. In a small bowl, combine peanut butter batter ingredients until smooth. Lightly grease 9 x 9 pan with oil. Pour brownie mixture into pan. Drizzle with peanut butter batter and put in the oven for 40 minutes or until a toothpick comes out clean.

What Are Those Chia Seeds Anyway?

All of our gluten free mixes use chia seed superfood to increase the nutritional profile. So what are they anyway?

Cha Cha Cha Chia...yes they are related to that novelty chia pet that was so popular in the 80's. Chia seeds however date back much further then that. The seeds were a staple of the Mayan and Aztec diet. It was believed that the Aztec warriors survived days with just a few teaspoons of chia in their diet. Chia seeds are one of the most powerful superfoods providing excellent source of fiber, antioxidants, vitamins and minerals. Plus they are loaded with omega 3's, containing eight times more than salmon, gram for gram.

When added to water and allowed to sit for 30 minutes, chia forms a gel that can be the base of a drink or pudding. Research suggests that this gel like consistency also occurs in the stomach, slowing down how fast our bodies convert carbohydrate calories into simple sugars. In addition, because of this, chia offers the ability to aid in fueling endurance, perfect for a pre-workout food. I like to add chia to smoothies, oatmeal and ofcourse my baked goods. This morning I was cleaning up files on my computer and stumbled upon the original packaging for purely elizabeth gluten free muffin mix. Now when I say original, I mean, the labels that I created before asking for help. You see, I'm the type of person that enjoys doing everything, well most everything. Especially anything creative (I actually had a stint at FIT in accessories design). I like to try and figure out many things on my own, which is why it is sometimes hard to ask for help. My graphic designer Jen, got wind of what I was doing and immediately offered to "clean things up a bit". Here's version I from me:

Lesson learned...There is a reason people specialize in certain areas and are experts. When in doubt, source it out. Even if it costs extra money and time, it is most often worth the expert advice in the long run. Thank you to my graphic designer Jen at 4:52 design, for her incredible work and never-ending help and to Miha, my amazing food photographer who helped to make the muffins so visually delicious.

green printing in the new year

I just ordered eco-friendly flyers for some upcoming events from www.greenerprinter.com. They are a wonderful green business certified company that offers various FSC (comes from sustainably harvested forests)100% recycled paper products with soy and vegetable based inks. In addition, they are a member of Green America (a community I hope we can be a part of in the future). I purchased our holiday cards from them and was quite happy with the printing and quick turn around results. They are a great resource for anyone looking to print anything from business cards and letterhead to banners and calendars. Their site even allows users to design online if you don't have the help of a graphic designer (more on this topic soon).

In looking ahead to 2010, we are committed to continue using eco-friendly printing solutions. The tough thing I've learned about green printing for a small business owner is the quantity discounts. For example, in looking to purchase an eco-friendly stand-up pouch, we would need to order 30,000 units per sku for it to be economically feasible. Something we clearly are not quite ready for at this point. Hopefully as more companies demand eco-friendly solutions, the costs will begin to come down.

Journey Ahead...

Healthy Gluten-Free Treats For The Holidays

I'm headed to my boyfriends parents house in Reading PA for the holiday weekend. While I never celebrated Christmas growing up, its fun to be a part of new traditions. So this year, I opted to make some healthy gluten-free treats in place of some more traditional fare. I made a batch of gluten-free, vegan, agave sweetened thumbprint cookies and gluten-free pumpkin spice cake (recipe in previous post but modified by putting into two round cake pans for 30 minutes) with a creamy cashew frosting to be dairy free and soy free.

While we are in Reading, I look forward to our usual holiday traditions; a stop by the Reading Farmers Market for some great organic produce and pre-made food, lunch at Good Eatz Green Cafe on Penn Ave for gluten-free and organic menu options, and a few long runs in the woods. Wishing everyone a very happy and healthy holiday weekend!

Creamy Cashew Frosting

Ingredients:

2 cups of raw cashews (soaked overnight)

1/4 cup of agave nectar

1/4 cup of organic maple syrup

2 tsp fresh lemon juice

1 tsp vanilla extract

1 tsp ground cinnamon

1/4 cup of raw coconut oil

1/2 cup almond milk

Directions: In a high speed blender, mix all ingredients until smooth.

...Sources say the purely elizabeth pumpkin spice muffins are our most delicious, moist, healthy treats yet! Regis and Kelly even noshed on them and thought they were tops!

Gluten Free Pumpkin Spice Muffin Recipe:

1 Purely Elizabeth Apple Spice Muffin Mix
1 can organic pumpkin puree
½ tsp of ground cloves
1 egg
½ cup extra virgin olive oil/ extra virgin coconut oil, melted
¾ cup maple syrup or agave nectar
Optional: raisins, walnuts

Directions:
In a large bowl, GENTLY mix together dry mix, pumpkin puree, cloves, egg, oil and sweetener. Pour into muffin tray (I prefer using the mini muffin tray, as they are perfect bite size treats). Bake in the oven at 375 for 25-30 minutes.

*Note: If your muffin tray is apt to sticking, use a non-stick olive oil spray to coat
