Vanilla

Native to tropical parts of the Americas but now grown in Southeast Asia, Tahiti, and Madagascar, vanilla is a precious spice derived from the fragrant seed pod of the vanilla orchid. Once as rare as only a bean pollinated by one small Mexican bee could be, vanilla is now widely used to add an exotic touch to baked goods, pancakes, and other foods.

Our favorite vanilla extract comes from Nielsen Massey, considered one of the finest vanillas by the most discerning bakers.

Olive Oil

Olive oil is rich in monounsaturated fat, which has excellent health benefits.  People who use olive oil regularly, especially in place of other fats, have much lower rates of heart disease, atherosclerosis, diabetes, colon cancer, and asthma. We love olive oil in our baked goods for the pure health benefits and taste. Our favorite is extra virgin varieties.

Applesauce

Applesauce is added to our mixes to replace the use of eggs, reducing fat and cholesterol and keeping our products cruelty free. Plus, it adds a wonderful moisture to the baked goods. Apples are loaded with fiber and phytochemicals.

Our favorite applesauce hails from Vermont Village, where they make applesauce the old-fashioned way, cooked in small kettles, using the whole apple including the peel.

Maple Syrup

The process of creating maple syrup begins with tapping the maple tree, which allows the sap to run out freely. The sap is clear and almost tasteless and very low in sugar content when it is first tapped. It is then boiled to evaporate the water producing syrup with the characteristic flavor and color of maple syrup and sugar content of 60%. Maple Syrup is an excellent source of manganese and a good source of zinc. We recommend using only the purest maple syrup, forget Aunt Jemima. Our favorite comes from Coombs Family Farm in Vermont, a 7 generation family.
